A History of DMACC's French Chef Exchange
The DMACC French Chef Exchange has enriched the DMACC Culinary Arts program by providing all culinary students with opportunities to learn traditional French cooking techniques from French master chefs.
Since 1986 DMACC has hosted an annual French Chef Exchange with Des Moines’ French sister city St. Etienne, France. Chefs from the Association des Cuisiniers de la Loire (the Chef’s Association from the St. Etienne region) spend two weeks at the Iowa Culinary Institute as guest lecturers and visiting chefs. Additionally, second year ICI students have the opportunity to apply for a scholarship to travel to several areas of France and then intern in the French chef’s restaurants.
